I have published my site and then been editing it. Unfortunately I have made a few mistakes and now I want to go back to the published version, there are many saves and I do not know which is the published one. Is there a way to find out when the published version was saved?

Are you using Sitejet Studio or with cPanel or Plesk?
It is with cPanel
Well, unfortunately, there is no feature or workaround with cPanel that I know of. You could get in touch with cPanel directly and ask them if there are any logs about the publishing? Or maybe you see the exact time within the website files on your server?
