I need to create a new site similar to Miro or ORMS (they don’t use sitejet), but without commerce.
The new site simply needs to display products in categories.
Q: Which existing template with collections would be the best to start this off with, or would it be easier to use cards and/or accordions instead of collections?

sooooo, if you do not want to include those products with the commerce feature or a shop then I highly recommend to build this as a collection. That tool is exactly what lets you build these display of products. 
Regarding a template, you can choose what suits you best as you can add a collection to any website.

I realised that image cards won’t work, because there is nothing connected to them (tags/categories).
I am busy studying the collections help articles and building my first one as we speak! 
I can already see it’s a poweful feature if you fully understand how to use it!
I’ll go with a blank template first, so that I can learn as much as possible. 
You could also add like a collection template to a blank side as well and see how it builds the basic collection.
Its a fun tool and we have seen some amazing work by other Sitejetters. There is even a publisher that uses 7 or more collections in one website with a few thousand entries. Really exciting
